Chef Xarles Thomson specializes in Asian-Peruvian cuisine, utilizing ingredients and techniques from his home country Peru. After 20 years of cooking experience in the U.S. and Europe, he combines his diverse training and background to create top quality creative dishes. His culinary philosophy: “To cook with passion, harmony, and love is one of the noblest acts in the universe. The kitchen creates art, and food quite literally gives life.
