His tonkotsu broth is cooked over 18 hours and is made simply with pork bones and water. The dedication to preparing the broth is what gives it so much flavor, and wouldn’t be possible without Chef Kei’s expertise and sole focus on making the most authentic ramen in Miami. Keiichi Maemura

In 2011, Chef Maemura opened his own restaurant in Kagoshima, Japan. Before that, he worked as a manager at Ippudo Ramen Restaurant, which is famous in the Japanese ramen industry. In 2018, Chef Maemura opened Shimuja Florida, which had always been his dream.
